Esquites Recipe With A Twist

Call me biased but something about Latino dishes that have no comparison when it comes to making me do my “here comes food” happy dance. Another Latino cuisine perk is also that we tend to borrow favorite recipes from other countries and give it a little twist while sticking to what makes it so delicious.
Latino or not, if you haven’t had esquites (Mexican street corn salad) than you are missing out on some serious yumminess! You can take this recipe and truly make it your own. Only thing I would stick to is the McCormick Mayonesa (mayonnaise) with lime juice. Mouth-watering good it’s no surprise that it is Mexico’s #1 selling mayonnaise and you can find it at your local Walmart or just order it online from them.
Sunday is typically the most chill day of the week for us and it’s also when I tend to have one of my toddlers help me prepare a simple dish. With Hispanic Heritage month beginning on September 15th, I decided we would stick to Latino dishes they haven’t tasted yet. Achilles, as always, was more than ready to help me add and mix all the ingredients.
Jade, on the other hand, was more than happy to be the one to have a first test at Mami’s twist on the traditional Mexican dish, esquites. Safe to say she approved and sealed it with a besito!

Although I’m Dominican and Salvadoran, I am a Mexican food lover all day! I mean esquites, tacos, quesadillas… heaven in my mouth. What are some of your favorite Latino dishes?
